El chucrut y la salud
- Se sabe que ciertas especies de Lactobacillus aisladas de chucrut muestran potencial probiótico, con tolerancia a pH bajo y actividad antimicrobiana contra patógenos in vitro (estudio).
- Se ha demostrado que Lactobacillus paracasei HD1.7, que se encuentra comúnmente en el chucrut, produce una bacteriocina de amplio espectro que puede desempeñar un papel en la conservación del chucrut (estudio).
- En estudios sobre animales se observó que la administración oral de jugos de chucrut en ratas Wistar condujo a un aumento de la actividad de enzimas hepáticas y renales (estudio).
- Algunas bacterias del ácido láctico contenidas en el chucrut generan ácido linoleico conjugado, para el cual hay evidencia de actividad anti-cancerígena y anti-aterosclerótica en animales (artículo, artículo).
- El chucrut contiene compuestos fitoquímicos como el kaempferol que protege del daño oxidativo. Los isotiocianatos tienen propiedades antimicrobianas, evitando el crecimiento de una variedad de especies, incluidas E. coli, C. difficile, C. jejuni y C. perfringens (estudio).
