¿Qué es la kombucha?
La kombucha es una bebida del tipo té fermentado que, según se informa, se originó en el noreste de China cerca de año 220 a. C. y era consumido ampliamente durante la dinastía Qin.
Luego, este tipo de bebidas de té fermentado se hizo popular en Rusia y Europa del Este.
¿Cómo se produce la kombucha?
- La composición exacta del SCOBY.
- El tipo y concentración de té y azúcar.
- La concentración de oxígeno.
- El tiempo de fermentación.
- La temperatura.
- La duración del almacenamiento.
Las especies de bacterias y hongos que constituyen el SCOBY incluyen típicamente bacterias del ácido acético (Acetobacter, Gluconobacter), bacterias del ácido láctico (Lactobacillus, Lactococcus) y levaduras (Saccharomyces, Zygosaccharomyces). Estos son algunos ejemplos.
